I have a history of going completely off the rails at breakfast time, and a breakfast buffet was the final boss battle I routinely lost. I would approach the counters, lit up like a gambler who just walked into a casino. I’d dish up some scrambled eggs or a fresh meat-lover’s omelette and ask, “Bacon or sausage? Links or patties?” Let’s have all of the above (as long as the bacon is crispy). There were waffles, pancakes, French toast, biscuits and gravy, English muffins, bagels, chocolate chip muffins, country ham, chorizo, breakfast burritos, crispy hash browns, and crepes. The aluminum dispenser offered an unlimited supply of ice-cold milk, a gateway food to poor eating.
I didn’t bother with the oatmeal, fresh fruit, or any ingredients used in a salad. As far as I was concerned, that wasted space should have been used for another bin of crispy bacon to avoid waiting for the supply to replenish.
Those were the bad old days of my eating patterns, and I’ve cleaned up my diet significantly. Since the True Food Summit in January, I’ve been even more vigilant about choosing the highest-quality foods and ingredients. I know to avoid traditional, processed junk products; however, there is a wide range of “healthy” alternatives—some healthier than others. There are three varieties of pancake mix:
Base Cakes (Original classic) - Buckwheat, Arrowroot, Coconut Sugar, Ceylon Cinnamon, Potato Starch, Pink Himalayan Salt. Plus: Monocalcium Phosphate and Sodium Bicarbonate for leavening.
Brain Cakes (Boost memory, reduce stress, enhance focus) - Classic recipe plus additional ingredients: Cordyceps mushroom, Lion's Mane mushroom, Gotu Kola, Bacopa Monnieri, Siberian Ginseng, Rhodiola.
Prana Cakes (Boost natural energy, support vitality, balance immunity) - Classic recipe plus additional ingredients: Cacao, Sacha Inchi, Spirulina, Maca, Ashwagandha Root Powder

You don’t have to be a professional chef to make delicious pancakes and waffles. Whisk the mix with water (or your favorite milk alternative) and cook the pancakes on a griddle or waffle iron. Here’s Sierra showing how to do it.
Sure, the ingredients are clean and beneficial, but the million-dollar question is: How do they taste? I once asked Sierra’s dad, Scott, if there was any healthy food that he did not like, and he said no. That is an enlightened way of eating, so he will tell you that these pancakes taste delicious. On the other hand, I have a history of being a picky eater. If I tell you they taste good, you can believe it. They are delicious.
You can keep them simple as a complement to the meal or go all out. The base cakes are so good that I can eat them plain with grass-fed butter or ghee. They work with sweet or savory dishes, so tailor them to your liking.

I have shared this tool before to help you make better choices. I use the free Yuka app to scan product bar codes to assess the quality of food products and cosmetics. Don’t take this app as the final word, though. I was surprised to see a poor rating for Base Cakes. The app gives high marks except for two additives that it considers negatives: monocalcium phosphate and sodium bicarbonate (baking soda). The FDA classifies these additives as Generally Recognized as Safe (GRAS) when consumed in normal dietary amounts. The concern about monocalcium phosphate is excess phosphorous intake due to its presence in many processed foods. If you’re eating minimally-processed foods, the monocalcium phosphate in these mixes should not be an issue, in my opinion.
